School is back in session ! It's the perfect time to get back to healthy habits and avoid repeating  summer excess!

Here are 6 healthy back-to-school lunch ideas for you or your children!

 

Rubik’s cube

We've got recipes for fresh, colourful Rubik's cubes, a great way to get your kids to eat fruits and vegetables!


For a 3x3x3 Rubik's Cube, you'll need 27 pieces of 2-3 cm.

Greek Salad

We're taking you to Greece this time, with a Greek salad. Made with fresh, colourful ingredients, it's packed with nutritional benefits.

 

Here are the ingredients you'll need:

 

 

Steps of the recipe

Step 1 – Peel and slice the cucumber. Place in a bowl; add salt. Wait a little and, as soon as the salt has melted, place the cucumber slices on a clean cloth and leave to drain while you prepare the remaining ingredients.

Step 2 - Remove the cheese and drain on paper towels. Slice the tomatoes, slice the onions, separating the rings.

For the presentation

STEP 3 - Arrange the vegetables in a wide, not too deep salad bowl in a circle. Start with the tomatoes, sprinkled with 1 pinch of oregano, then add the cucumber, also sprinkled with 1 pinch of oregano. Then add the onion rings and feta cheese, and finish with the olives.

STEP 4 - Drizzle with olive oil and sprinkle with oregano.

 

 

Lentil and smoked salmon salad

This quick-to-make salad is excellent for your health thanks to its various ingredients, which are rich in omega 3, iron, and fibre. 🐟

Steps of the recipe:

STEP 1- Rinse and drain the lentils. Heat them in the microwave for a few minutes (they should be lukewarm).

STEP 2 - Prepare a salad dressing with white mustard, sunflower oil, and raspberry vinegar (essential)!

STEP 3 - Peel and chop the shallots.

STEP 4 - Pour the sauce over the still-warm lentils, with the shallots. Arrange on the plates.

STEP 5 - Cut the salmon slices into strips.

STEP 6 - Arrange the salmon strips on each plate, with a few sprigs of chives.

This express carrot soup is THE perfect solution! In just a few simple steps, you'll have a deliciously velvety soup full of flavour.

STEP 1 - Heat the oil in a pressure cooker.

STEP 2 - Fry the chopped onion, add the potato, and the chopped carrots.

STEP 3 - After 5 minutes, the mixture should be a nice caramel colour. Add the stock, close the cooker and cook for 10 minutes from the time the valve is turned.

STEP 4 - To finish, add the cumin and parsley and blend.

Meatballs with tomato sauce 🍅

No more modelling clay to keep the kids occupied? Invite them to make meatballs with you!

Steps in the recipe :

STEP 1 - In a salad bowl, mix the meat, basil, 1 teaspoon of salt, and a large pinch of pepper.

STEP 2 - Form into small balls, flatten slightly, and set aside.

STEP 3 - In a high-sided frying pan or casserole dish, brown the finely chopped onions in the olive oil and add the tomato.

STEP 4 - First cook over high heat, stirring often.

STEP 5 - Then simmer until reduced by half.

STEP 6 - Place the meatballs in the thick tomato sauce and cook for 5 minutes on each side.

STEP 7 - If necessary, divide into two batches.

STEP 8 - Serve with white rice, plain pasta, or green vegetables.

 

Cheese-stuffed mushrooms

You haven't had time to go shopping and need to prepare a quick lunch to accompany your salad?

If you've got a few mushrooms left in the fridge, don't hesitate to stuff them with different ingredients, whether cheese, spinach, chorizo, or vegetables!

 

Here's the list of ingredients you'll need for cheese-stuffed mushrooms:


Steps of the recipe :

STEP 1 - Wash the mushrooms and dry them well in a tea towel.

STEP 2 - Cut the stems flush with the mushrooms, then spoon the cheese over them. Arrange in a dish, season with salt and pepper, and drizzle lightly with olive oil.

STEP 3 - Bake for 20 minutes at 355 F and serve with a green salad.
