Healthy recipes for the festive season!

🐚 Carpaccio of scallops with coriander

For this recipe (serves 4), you will need :


Step 1: Using a wide, sharp knife, cut the scallops lengthwise as thinly as possible.

Step 2: Prepare the seasoning: olive oil, lemon juice, and coriander.

Step 3: Arrange the scallop slices in a rosette on the plates and sprinkle with the seasoning.

Step 4: Finish with the pink berries and season with salt and pepper.

Step 5: Tip: The scallops will taste better if you prepare the plates the day before and let them marinate.

💡Fresh coriander is excellent for your health, detoxifying the body and digestion.

 

🍁 Butternut squash and gorgonzola cappuccino in verrines

Here are the ingredients you'll need to make this starter for 4 people: 

Step 1: Peel the squash, remove the seeds and cut the flesh into large cubes.

Step 2: Peel and chop the onion. Brown in a casserole dish with olive oil, along with the crushed garlic clove.

Step 3: Add the diced squash and stock, season lightly with salt and pepper, and a little nutmeg.

Step 4: Cover and cook on a low boil for 30 minutes.

Step 5: Meanwhile, bring the cream to the boil with the finely diced gorgonzola. Stir until the gorgonzola has melted, then remove from the heat.

Step 6: Allow to cool, then pour the cream/gorgonzola mixture into a siphon.

Step 7: Insert a gas cartridge, shake the siphon 3-4 times and set aside in the fridge for 1 hour.

Step 8: When the squash is cooked, purée it in a blender. Add a little water if the soup is too thick.

Step 9: Divide the soup between the verrines and chill until ready to serve.

Step 10: To serve, remove the verrines from the fridge and add the whipped cream beautifully on top of the soup, using the siphon, followed by a spoonful of red caviar.

💡Butternut squash is rich in fiber and minerals. It helps reduce the risk of cancer and eye-related diseases. 

 

 

🍊 Duck breast with citrus fruit

Here are the ingredients you'll need for 2 people:  

Step 1: Set aside half a grapefruit.

Step 2: Peel the remaining citrus fruit to obtain the supremes.

Step 3: Remove as much fat as possible from the duck breasts.

Step 4: Gently fry the citrus fruits in the oil until they begin to brown.

Step 5: Add the meat and sear it in the citrus: the inside should remain pink.

Step 6: When ready to arrange on the plates, season with the juice from the remaining half grapefruit, salt and pepper to taste.

 💡Duck is a meat low in saturated fat.

 

 

🎄 Christmas tree- Fruit salad

To make this colorful tree, you'll need : 

Step 1: Place the apple, cut at the base, on an attractive plate so that it sits securely.

Step 2: Peel and rinse the carrot.

Step 3: Place a skewer in the center of the apple to skewer the carrot.

Step 4: Place toothpicks on the apple and carrot, pressing them in to form a conical shape.

Step 5: On each toothpick, place a grape, then a cube of another fruit... Cover the entire surface.

Step 6: Finish by planting new picks for decorations with coloured fruit to form baubles.

Step 7: Cut a star from a slice of fruit to place at the tip of the tree.
